ESSENTIAL OIL RECIPE: The Southern tradition of eating Black Eyed Peas on New Year's Day to attract wealth and prosperity in the coming year continues with this delicious recipe made with pure essential oils.

Ingredients:

1 pound fresh shelled black-eyed peas, or 1-pound (2 1/2 cups) dried black-eyed peas
2-4 drops organic black pepper pure essential oil
2 drops organic coriander pure essential oil
2 drops organic sweet basil pure essential oil
1 medium onion, peeled and quartered
1 stalk celery, chopped
1 ham hock (optional)
1 small bunch curly or flat-leaf parsley
Celtic or coarse Salt to taste

DIRECTIONS:

Rinse your fresh or dried black-eyed peas in cool water. Put into a large pot and cover with water, about 2 inches of water showing above peas. Add the onion, ham hock (optional), parsley (including stems). Cover, and bring to a slow simmer, below the boiling point over medium-high heat. Allow to cook until the peas are tender, about 45 minutes for dried peas (though cooking time will vary). Do not stir the peas while they are cooking because they can break down too much. Add salt during the last 10 minutes of cooking.

At the end of the cooking cycle, with heat turned off, add organic essential oils of black pepper, coriander and sweet basil to taste. If you did not use a ham hock for fat stock you will need to blend your oils in 1/8 tsp of olive oil before adding them to your black eyed peas.

The peas will keep in their cooking broth for about 3 hours at room temperature. Then stored in an airtight container in the refrigerator for 1 to 2 days. Serve black-eyed peas hot, along with their broth, in individual bowls. If desired, shred the ham hock meat and serve with the peas.

CAUTION: Due to its gently stimulating properties avoid Coriander essential oil during first 3 months of pregnancy.
